Almond and apple cake

Need an inspiration for a simple and healthy cake?

This is a fabulous gluten-free and dairy-free almond and apple cake that I made this Sunday. It is (well, it was..) so moist and delicious!

And not only that. Cakes can be healthy, and this one certainly is. It’s full of health promoting ingredients including:

Almonds – a great source of healthy fat and protein to keep your mood, concentration and weight stable; calcium for healthy bones and nervous system; and vitamin E for glowing skin

Apples – contain quercetin, a substance known to reduce the symptoms of seasonal allergies; and fibre to keep your bowels regular and to prevent constipation

Cinnamon – lovely warming spice that helps to keep your blood sugar in balance, preventing energy and concentration dips

Eggs – a good source of choline, a substance that is important for proper brain function and heart protection; vitamin D for strong immune system; and a great source of protein for plenty of energy

 

You will need:

3 apples, peeled, cored and chopped (organic when possible)

1/2 lemon, juice only

100g sugar (you can use honey, maple syrup or chopped dates instead)

8 free-range eggs

300g ground almonds

50g or a handful of flaked almonds

1 teaspoon cinnamon

 

Directions:

Preheat the oven to 180C. Lightly grease and line the base of a 25cm/10in tin.

Place the apples into a pan with half the lemon juice and two tablespoons of sugar. Bring to a simmer, cover and cook on a low heat for about 7-9 minutes or until the apples are soft. Leave to cool.

Put the cooled apples, eggs, ground almonds, remaining sugar and cinnamon into a food processor and blend together. Pour into the prepared cake tin and sprinkle with the flaked almonds.

Bake for about 40 minutes or until a skewer inserted into the cake comes out clean.

Leave to cool slightly before you remove the cake from the tin.
