Are your children getting enough vitamins?

Are your children fussy eaters? Do they refuse fruit and veggies on a regular basis? Are you concerned that they might not be getting enough vitamins?

One clever way to get nutrients into your children especially now in the summer are home-made ice lollies.

They are very easy, tasty, fun and healthy and the children can make them themselves, bonus!

Here are some refreshing recipes (make 4):

 

Carrot, orange and pineapple ice lollies 

Ingredients:

  • 2 carrots, roughly chopped
  • 1 lemon, juice only
  • 1 orange, juice and pulp
  • 1 cup pineapple fresh
  • ½ cup water
  • 1 tsp coconut oil/butter (optional)

 

Coconut, avocado and lime ice lollies

Ingredients:

  • 1/2 can of coconut milk or cream
  • 1 avocado
  • 2 tsp honey
  • 2 limes, zest and juice
  • 1 tsp coconut oil/butter (optional)

 

Raspberries, coconut and vanilla ice lollies

Ingredients:

  • 1 cup fresh or frozen raspberries
  • 1 cup coconut (alternatively almond, oat or rice milk)
  • 1 tablespoon of good quality honey
  • 1 teaspoon vanilla paste
  • 1 tsp coconut oil/butter (optional)

 

Directions:

Blend all ingredients using high speed blender until smooth and creamy. Coconut oil helps to prevents ice crystallisation. Evenly pour into ice lollies molds (choose BPA free), freeze and serve.

You can use any variation of soft fruit and vegetables including mango, bananas, peaches, pears, blueberries, avocado, spinach, mix it either with natural unsweatened yoghurt, coconut water, milk or cream or just filtered water. As a sweetener you can use a good quality honey or dates. You can also add vanilla paste or chocolate powder to make ice lollies more exciting. All you have to do is to blitz togehter, pour into your moulds and there you have it, perfect healthy refreshing lollies.
