OMG, I almost forgot about elderflowers this year. I make an elderflower cordial every year, I can simply not imagine a summer without it. Coming towards the end of the season I luckily managed to pick some elderflowers yesterday to make this delicious, healthy and refreshing cordial, just in time for the heatwave apparently arriving next week.
Traditionally used for detoxification purposes, elderflower is known to contain powerful antioxidants such as vitamin C that helps to prevent free radical damage, and phytochemicals like quercetin that assists in reducing the symptoms of seasonal and environmental allergies.
- about 25 elderflower heads
- grated zest of 4 unwaxed lemons (you can use limes or oranges or a mixture of them instead), plus their juice
- 500g unrefined cane sugar
- 1 heaped tsp citric acid (optional)
Bring 1.5l water to the boil. Add sugar, reduce the heat and simmer for a couple of minutes, stirring gently to dissolve the sugar. Set aside and leave to cool completely.
Meanwhile, remove any dead bits and leaves from the elderflower heads. Place them in a colander and wash under cold running water, let the elderflowers to drain.
Once the syrup cooled down, add the elderflowers, grated zest and juice of lemons/limes and/or oranges and citric acid (optional), stir to mix. Cover and leave the cordial to infuse in the fridge for 48 hours, stirring a couple of times during this period.
When infused, strain the liquid through a piece of muslin and using funnel pour into bottles (thoroughly washed or sterilised).
Another great idea of keeping the cordial fresh and handy is to pour the cordial into ice cube trays and freeze, then simply defrost and dilute as needed.
Fresh cordial will keep in the fridge for up to 4 weeks, frozen in the freezer for up to 3 months.
